Rule of 3’s

We went to a great party where we were told to cook and bring  a curry dish.

We were going to be judged on this dish.

Scary.

And we were going to taste and judge everyone’s dish.

No problems there.

Dave made his delicious Massaman Curry, a Thai peanut based curry, and got 3rd place.  Here is his recipe for which he says he goes by the Rule of 3’s.

Massaman Curry

3 tbsps massaman curry (you can find this at most grocery stores but if you can’t, you can try an Asian specialty store)

3 tbsp chunky peanut butter

3 potatoes, peeled and diced in chunks

3 chicken breasts, diced in chunks

3  cloves of chopped garlic

1 can of coconut milk

olive oil

salt and pepper to taste

brown sugar to taste

lime juice (optional)

cilantro (optional)

chopped unsalted peanuts for garnish

Saute garlic until soft in olive oil in large frying pan on medium heat, add massaman carry and peanut butter and cook for 2 minutes.  Add potatoes and cook for 5 minutes as they take longer to cook than chicken.  Add chicken and cook until no longer pink.  Add coconut milk, salt, pepper, brown sugar and cook until potatoes are tender, about 20 minutes.  Add cilantro and lime juice if wanted and garnish with chopped peanuts.  Serve over basmati or jasmine rice.
