Well you know it was never really closed.

My Husband had a dream.

No, not about racial freedom…about fish tacos.

He isn’t that deep!  But he is a good cook!

Dave made his own corn tortillas.  He even made a wooden tortilla press. From wood!  Talk about homemade!

We had Saban mahi-mahi and grouper, shrimp, fresh pineapple salsa, homemade guacamole, cilantro from Saba’s own organic farm,  and garlic aioli to fill our tacos with.

Guacamole


3-4 ripe avocados

limes

tomato, chopped

half red onion, chopped

cilantro, chopped

salt and pepper

hot sauce

1.  Slice avocado in half. Take knife and gently strike the ‘seed’ in the middle with the long sharp side so the knife sticks into it and it will pop out.

2.  Scoop avocado flesh out with a spoon close along edge of skin.

3.  Mash with fork.

4.  Add chopped tomato, onion and cilantro.

5.  Squeeze some fresh lemon juice and add, salt, pepper and hot sauce to taste.

TIP:  Add cilantro to sour cream and pulse in a blender for delicious green sour cream!
